Crispy Banana Rolls with Lime, Coconut and Chocolate Sauce

Ingredients for :

4 people
Brick pastry sheet
4 Units Brick pastry sheets
Banana
2 Units Bananas
Lime
1 Unit Lime
Dark chocolate
100 g Dark chocolates
Noix de coco
4 g Coconuts
UHT Cream 30%
10 cl UHT Cream 30%

Method :

  1. Peel bananas, cut them in half and then into 5 cm pieces.
  2. Lay the brick pastry sheets on the work surface. Cut them in 10 cm wide strips. Melt 20g of Unsalted Moulded Butter and use it to lightly brush both sides of the brick pastry sheets to prevent them from drying.
  3. Roll up banana pieces in the strips of brick pastry.
  4. In a frying pan, melt the remaining unsalted butter until bubbly. Place the banana rolls in the frying pan and brown on all sides.
  5. Melt chocolate and cream in a saucepan over a pan of simmering water.
  6. Toast shredded coconut in a very hot frying pan. Set aside. Clean the lime and grate the zest.
  7. Place crispy banana rolls on a plate, sprinkle with coconut and lime zest and serve with chocolate sauce.

Paysan Breton tip

Instead of brick pastry you may use Paysan Breton Crêpes Authentiques in the same manner.
