Savoury Herb Cheesecake

Ingredients for :

4 people
100 Units Crackers
2 cl Waters
1 Unit Egg
1 Sheet Gelatin
UHT Cream 30%
13.5 cl UHT Cream 30%
2 Sprigs Chives
Salt, pepper
Pinches Salt, pepper

Method :

  1. Preheat oven to 180°C (Gas Mark 6-7).
  2. In a food processor, finely crush crackers. Transfer to a large bowl, fold in melted butter and water. Mix together.
  3. Line bottom of an 18-20 cm springform tin with the mixture, which should be a bit sticky, about 1 cm thick and be sure to smooth out the top. Bake 8-10 minutes until biscuit turns slightly golden brown. Remove from oven and let cool to room temperature.
  4. Soften gelatin sheets in cold water.
  5. In a pan, slowly heat single cream and Madame Loïk Shallot & Chive Whipped Cheese, do not boil. Incorporate drained gelatin sheets and stir. Add egg, finely chopped chives, salt and pepper and stir.
  6. Pour mixture over the cooled biscuit. Refrigerate immediately for at least 3 hours before serving with a mixed green salad.

Paysan Breton tip

This recipe can be made in individual portions. In that case use 7-8 cm circles or mini springform tins to make the recipe.
