Zucchini, Mesclun and Garlic & Herbs Madame Loïk Whipped Cheese Rolls

Ingredients for :

4 people
Courgette
3 Units Courgettes
Mesclun
15 Sheets Mesclun
Turmeric
2 Teaspoons Turmeric
Salt, pepper
Pinches Salt, pepper

Method :

  1. Wash and dry the zucchini, cut off the ends. Using a vegetable peeler, cut strips along the length of the zucchini.
  2. Heat salted water in a saucepan.
  3. When boiling, plunge the zucchini strips for 2 minutes, drain them and then immediately dip them in a bowl of cold water for 5 minutes to stop cooking. Drain them again on a paper towel.
  4. On a board, lay out a strip of zucchini flat, cover with Garlic and Herbs Madame Loïk Whipped Cheese to a thickness of about 3mm. Spread a few mesclun leaves over the Whipped Cheese then roll gently.
  5. Proceed in the same way for the remaining straps.
  6. Arrange them upright, sprinkle with turmeric, season again to your liking and serve well chilled!

Paysan Breton tip

This recipe can be garnished with candied tomatoes cut into very small cubes, to be spread in step 4 along with the mesclun. Provide 4 to 5 candied tomatoes.
