Caramelized Pork Chops, Rocket Butter Mashed Potatoes

Ingredients for :

4 people
Pork chop
4 Units Pork chops
Soy sauce
4 Dessert spoons Soy sauce
15 g Honey
0.5 Units Potatoes
10 Handfuls Rocket
Fleur de sel
1 Pinch Fleur de sel
1 Pinch Pepper

Method :

  1. Remove Moulded Butter with Guérande Salt Crystals from refrigerator 1 hour before use.
  2. In a bowl, mash 50g of Butter with Guérande Salt Crystals with a fork until soft, cut the rocket and fold it into the butter, mix together until combined. Refrigerate.
  3. Peel, wash and boil potatoes in salted water. Drain. Mash potatoes and fold in the rocket butter. Stir and keep warm.
  4. Cook pork chops 7-8 minutes in a frying pan with a bit of butter. Skim excess fat and deglaze pan with soy sauce and honey. Continue cooking the pork chops until they are nicely caramelised.
  5. Serve with the rocket mashed potatoes. Add a knob of butter with salt crystals to the rocket mashed potatoes.

Paysan Breton tip

You can marinade the pork chops in a mixture of honey, soy sauce and 4 spice mix for 1 hour and use the marinade to caramelize the pork chops.
