Chocolate Crème Brûlée

Chocolate Crème Brûlée

Ingredients for :

4 people
Milk
2 cl Milk
Powdered sugar
50 g Powdered sugar
Vanilla pod
1 Unit Vanilla pod
Egg
4 Units Eggs
Dark chocolate
100 g Dark chocolates
Brown sugar
4 g Brown sugar

Method :

  1. Preheat oven to 130°C (Gas Mark 4-5).
  2. In a pan, bring milk to a boil with 1 vanilla bean, split and seeded. Remove from heat and leave to cool.
  3. Melt chocolate in a bowl over a pan of simmering water and let cool slightly.
  4. In a large bowl, whisk egg yolks with sugar until mixture is paler in colour. Using a spatula, fold in warm chocolate and Crème Fraîche Epaisse. Add cooled milk, making sure to have removed the vanilla bean, and stir.
  5. Pour the mixture into 4 small ramekins and bake for at least 25-30 min. The crème brûlée is cooked when it is still slightly wobbly in the middle. Allow to cool to room temperature before refrigerating.
  6. Just before serving, top with brown sugar and place ramekins under the oven grill for 2-3 minutes to caramelise the sugar.

Paysan Breton tip

If you prefer, milk chocolate or praline chocolate may be used instead of dark chocolate.
